apparently fresh eggs poach better. thats how you can tell if an egg isnt fresh -- it won't poach very well.

Fresh eggs are the absolute best! My sister has just started a chicken coop in her backyard, and her 6 chickens are already laying at least 4 eggs a day! Heaven for a baker like me!

I grew up on a farm where it was often one of my jobs to collect the eggs and wash them to be sold at church and among friends in the neighborhood. My parents always have a refrigerator stocked full of fresh eggs. I'm so thankful to know first hand how lovely it is to eat fresh food.

Fresh eggs are the best. Last year an friend we hadn't seen for 4 years came to visit. Him and his children bought us a dozen eggs from their own chickens in their garden. They were the freshest most eggs with the biggest yellow yolks I've ever had - delicious. Your photos are beautiful.

I agree nothing beats fresh eggs. My little cousin raises chickens and every other week I find a carton of eggs on my porch. They make the most delicious omelets. I love the little blue green ones I get sometimes too.
