summer leftovers : strawberries & whipped cream

the best things to cook are the things that are
simple, quick, and absolutely delicious.
this is one of those things.
i've been making almond cakes since i was about 7 or 8...
ask my sister...she no longer cares for almond since
i used to make this on a weekly basis.
however, i never got over how delicious almond cake is.
here's the quick how-to:


ingredients:

1 1/2 cup flour
1 cup sugar
3 eggs
1/2 cup melted butter or ghee
2 tsp almond extract

whipped cream
fresh strawberries

whisk it all together. divide it up into two 6" round cake pans. cook for 25 minutes at 350 degrees. once the cakes have cooled, frost with whipped cream and strawberries however you like. voila! this is so so easy, and probably one of the most delicious things you'll ever eat.

Did you stabilize the whipped cream at all? Also, do you think this would work in a loaf pan? It sounds really tasty.

I just whip the cream until it's a little thicker than normal...a little more stiff.

And I think it would do great in a loaf pan...I've never tried it, but I don't see why it wouldn't work. You just might have to adjust the cooking time a bit. If you try it, let me know how it works out!!!
